It is a fresh cheese in which you can taste all the flavor of fresh milk coming exclusively from their own breeding. The sheep are raised in the wild (free to graze on uncultivated land). Once a year, as per ancient tradition, seasonal livestock migrations are carried out from the plains pastures to those in mountainous regions (transhumance).
