The hay diet is supplemented two months before slaughter.

Raised in an organic regime, antibiotics and hormones are not administered from birth.

Large intensive farms are not used:the animals still live free on the pastures today like a thousand years ago. Following the seasonal rhythms, the herd is moved to pasture ensuring them the best available grass offered by that particular time of year.
